Wine Grapes

For this type of fruit lambic, we always seek out distinct wine varieties from their respective leading regions in Europe. To achieve this, we collaborate with a group of befriended winemakers who also work naturally – think minimal intervention, fermentation with wild yeasts, organic or biodynamic cultivation, and so forth. During maceration, we are not afraid to apply certain vinification techniques to coax out even more surprising flavours and aromas.
