Quince

Quince? Most certainly!

A crate filled to the brim with bumpy, greenish-yellow quinces.

In our parts, quinces are typically harvested to make jelly. However, they are also excellently suited for a long maceration in lambic to release their complex and characteristic aromas and flavours. We source them very locally – preferably from the Pajottenland – to produce these in consistently small batches.
